It’s snowing….on my blog

Can you believe we’re in the final stretch of the year?!   I will be so glad to say see-ya to 2009.  It’s been warm in South Florida so I thought I’d add a lil’ chill with some blog snow… it?

Thanksgiving really did a number on my eating and the results on my scale.  I had lost another 2 pounds but by indulging in mashed potatoes, sweet mashed potato, rice, rolls ( Oh I love my rolls) and way too many desserts I gained those 2 pounds back.  So I’m back to the plan, eating healthy good food that won’t mess with my energy, weight loss and general well being.  I have to really focus and stick with the plan because this weekend I have another party to attend and I’ve been asked to make my yummy chili.  So this week started off with the following:

Green monster smoothie

I will be drinking these in the afternoon.  It’s a great snack.  The fruits (blueberries, bananas, strawberries) and the spinach really spike up my energy level.  And I’m going to go back to making them with green tea instead of the OJ. 

I’ve also been lacking in the protein intake so here’s breakfast:

Two egg whites, spinach scramble on 1 slice of whole grain bread.  I often add some pureed cauliflower to the eggs.  This breakfast not only fills me up but truly keeps me feeling full until lunch time.

Yesterday I was going to make some hummus but I didn’t have enough garlic ( I love lots of garlic in my hummus)  so I decided to use the chickpeas and make a quickie light salad. 

  • 1 can chickpeas rinsed and drained
  • chopped onion (red would be great to add color)
  • diced green bell pepper (I didn’t have any red, so add some also)
  • fresh cilantro (YUMM)

For the dressing……..

  • crushed garlic cloves
  • lemon juice or lime
  • 1/4 cup extra virgin olive oil
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper

In a bowl, toss the chickpeas, onion, cilantro, and peppers.  For the dressing, in a separate bowl, whisk together the lemon juice, olive oil, salt, pepper and garlic.  Then just toss the dressing over the chickpea mix, toss and enjoy.

I needed some protein to go with that side salad so I made some Panko tofu.  

  • cut up firm tofu in squares
  • dip in a beaten egg and sweet chili sauce whisked together
  • dip in panko bread crumbs

I fried a couple in a small amount of olive oil and I also baked a couple in the oven at 400/30 minutes.  The baked tofu was obviously crunchier but both were really good.  Dip in the sweet chili sauce (which I LOVE!) and you have a super quick easy snack or appetizer.









Now I have to step up my workout routine and continue with the C25K  running program. And so I pray that I can get through December without any eating/workout hiccups.  Just a matter of F.O.C.U.S.  (Follow One Course Until Successful).


A quickie visit to Miami and a quickie green meal

So much to do, such little time.  And that’s coming from someone who’s not working.  ME.  But I do keep busy.  That’s why I’ve slacked on the blogging.  I’ve been doing some research on something I’m working on, volunteering at church, attending 2 bible studies, running errands, keeping my home nice and clean, doing laundry, cooking, grocery shopping, going to doctor appts, etc, etc…..who the heck has time for a j.o.b?  (journey of the broke).  😦

But seriously, I don’t know where the time goes, and I’m pretty good with time management.  And for the record, because I know what you’re thinking, I only use Facebook while working in other screens.  I’m happy to announce that I’m one of only a few people who doesn’t play Farmville 🙂     It’s kind of interesting that some people I know are on Farmville from morning to night.  Can you say ‘addiction’…. 

Well, this morning I had to go to downtown Miami.  It’s a lovely place until you need a parking spot.  I drove around for 30 minutes and after praying to God, I got a spot right in front of the building I was going to.  Thank you Jesus!!  You’re so good to me.  There are still so many unoccupied, unfinished high rise condo buildings in that area.

I lived in Miami for 30 years but am now happy calling the Broward county suburbs my home.

I was starving when I got home and made my favorite quickie meal……tofu over spinach salad and a green smoothie.  I had been marinading the tofu in some Mojo, mustard and spicy sauce. 








Sauteed the tofu with onions and when it was done (15 min.) poured it over some spinach leaves and avocado.

While the tofu was cooking I baked some sweet potato chips and made a green smoothie with banana, strawberries,mango, oj and 2 cups of spinach.






















So yummy and healthy.  What’s your favorite quickie meal?


Let’s talk….

I know what you’re thinking….Martica’s getting lazy with her blogging duties.  Not so!  I’ve been, well, busy.  With, you know, stuff.  The kind of stuff that keeps you busy.   Let’s talk weather.  It’s been nice, not hot.  There’s a hurricane lurking around the Gulf and I guess we’re getting those winds??  It’s a nice welcome change around here, just can’t spend too much time on the hair.

Let’s talk flax. 

I’ve added flax seed to my diet.   Some of the benefits I’m looking forward to include:  smooth skin, they assist in building muscle and burning fat, they’re good for heart health, are high in Omega3 oils and they might even help with arthritis.  Back up!  Did I say it assists in burning fat and it’s good for my heart?!  That my friends is a good enough reason to sprinkle a couple of tablespoons into my smoothies or yogurt every day. If you have or are a teenager with acne, flax seed is supposed to help clear some of that up also.   Here’s my first plate that included some milled flax:










Let’s talk Biofreeze!  

Good, good stuff.  Ever since I started going for long walks and some light jogging, I always end up with back and hip pain.  I got a couple of  samples that were in my goodie bag from the 5k last weekend and felt instant relief after rubbing some on those sore spots.  I know it’s temporary relief and I have to get to the root of the problem, but the Biofreeze gel feels so good.  I’m hooked.  So I went and got a 4oz tube.












Let’s talk food.  

Since this week really has been a busy one, I have found myself making lots of quickie, rushed meals.  Now for me that’s not a problem, because most of what I cook takes less than 20 minutes.  My favorite for a quickie morning meal is yogurt, fruit and of course, now some flax seed.  I was soooo busy one day that I actually burned….well take a look for yourself……

No biggie, the chicken was salvaged,  and eventually was used for a couple of quickie wraps.

Oh and that’s pumpkin butter in the corner… that stuff!

I did try something new this week, Shiratake tofu noodles that I heard about from Hungry Girl.  They smell, icky, really icky.  But once you get the smell out by boiling them for a few minutes they weren’t that bad.  I added some Boca crumbles, sauce and made a spinach salad with tomato and feta. The noodles were ok but they come in a small bag and we only got 2 small servings out of it.  Since they’re soooo ridiculously low on calories, I would have liked to have eaten more of the noodles.   Talk about a quick meal, 3 minutes to boil the noodles, a few minutes to cook the Boca crumbles, add sauce, make salad and you’re done in less than 10 minutes!

Let’s talk sleep.

The time change this year has turned me into a napper.  I find myself wanting to go to sleep at 9pm.  On that note, this girl’s getting to bed, it’s late.

Blogger’s Block!!!

I know, I’ve been M.I.A. 

I just have a case of blogger’s block.   There just seems to be a lot going on and I’m a bit distracted.  So I will spare you all of the details and  entertain you with my eats for the last few days.  I really haven’t been cooking much.  My meals have been consisting of quickie sandwiches (healthy) and green smoothies.

A couple of mornings began with a great omelet and smoothie (FUEL!!!!)

Saturday was a busy one and it started with a 1/2 Luna bar and coffee. ( I hate running late).

That Luna bar has been in my purse for over a month.  I keep it with me for, well you know, emergency.  And this was an emergency.  I helped out with the Angel Food distribution  on Saturday and then spent the rest of my day running errands.

I also had a frozen ‘healthy’ meal while I was rushing around.  Pumpkin squash ravioli.

It’s gettin’ hot in here!!!!!!!!!!

Last night I didn’t sleep well.  The a/c is not cooling.  The temperature in my house was reading 80 degrees.  It was actually cooler outside last night (77).  Now all the ceiling fans are running and it’s not so bad. (who am I kidding, yes it’s bad).  Boy are we spoiled.  But then again, it is South Florida I live in and air conditioning is not an option, it’s a must.









None the less I am grateful!  Because I have those ceiling fans and they are cooling off my house until the a/c gets fixed.  That’s what I do now, I don’t  fret all day or torment myself over something I don’t have control over at the moment.  There’s always a bright side to every situation.  This too shall pass.


I wanted a cup of coffee so bad this morning but it’s just too hot, so I enjoyed cold yogurt and fruit instead.n  Thank you Lord that I have that choice!

Last night I made pizza with tofu, tempeh and spinach and it was really good.

I threw some fat free mozzarella  over it and it was a yummy, healthy din-din.

Well, I have a lot more yardwork to do but it’s just not going to happen today.  It’s too hot!

Stormy, snacky kind of day

Saturday was one of those lazy cloudy days that threatens rain, keeps you inside and then finally lets loose.  It was one of those thunder storms that makes you hide under the covers.  I have a lot of windows in my house and I WAS literally hiding from the lightning.  But look how pretty after the storm.












I was going to a beach clean up but that storm flooded my street and the lightning could probably be felt 20-30 miles away.  But we will definitely go next month.

It was a day to snack and snack we did (yet healthy).  Got some plantains that were ready (from my back yard :))

Sliced them up nice and thin.  Sprinkled them with olive oil, garlic salt, pepper and let them bake until they were a nice browned color.

The dip was easy:  light sour cream

onion, garlic, lemon n lime juice, cilantro.  So refreshing.  Went well with the plantains.

My sister in law had never tried tofu and was really wanting some.  So I made some, marinaded with a spicy teriyaki sauce and then sauted them with onions.  YUM!  She loved it with the spinach.  Gonna turn her into a veggie lover.

Then we snacked on veggie pizza made by yours truly.  Everything went on it!

Hung out with my son and nephews and it made for a great Saturday.
