Thai chicken lettuce wraps…YUM!

The women’s Bible study group at my church  had a potluck today and after much consideration, I went with the Thai chicken lettuce wraps.  It’s quick and easy, tastes really good and is healthy and nutritious.  I used a recipe from one of the foodies on foodbuzz, Kathy from Vegas. (sorry your link’s not working). 

  • 3 boneless chicken breasts (grounded)
  • 2 tbsp minced onion
  • 2 tsp minced garlic
  • small can of diced water chestnuts
  • 2 tsp ginger
  • 1/2 tsp light brown sugar
  • 1 tsp finely minced lemongrass
  • black pepper
  • 2 tbsp oil

I used  Bibb lettuce, grated carrot,  basil and cilantro for garnish. 

The only ingredients I left out of Kathy’s recipe is the fish sauce, and I used regular onion instead of green onions.

  • Heat oil in pan and add the ginger and garlic, sauté for 1 minute
  • Stir in the chicken and cook until done
  • Stir in all of the remaining ingredients and saute an additional 2 minutes (except the lettuce, carrot, basil, and cilantro)
  • Let the chicken cool off a bit, then serve a tablespoon or two of chicken on each lettuce leaf.  Garnish it with the grated carrot, basil, and cilantro.  Roll it like a taco AND….VERY IMPORTANT, serve with Thai sweet chili sauce. That sauce could become my new addiction 🙂

This week has been wonderful.  In a very quiet, peaceful way, The Lord has continued to show up in my life and he just keeps reminding me (I forget sometimes) how much he loves me.  I, in turn am trying to show my love for others, just as he would want me to.  We love, but sometimes we just forget to show and tell people how much they mean to us.  I received this card this week from a friend…..thankyou.

EPIC FAIL

Today started off like most Mondays.  I got up at 6:30a, woke up Hunter, watched him leave for school, resisted the TEMPTATION to get back in my cozy bed, made a yummy cup of coffee, ate some yogurt and a banana and spent some quiet time with my Bible.   Afterwards, did some housework, filled out job applications and eventually around noon went for a nice loooonnnngg walk. 

I made it home just in time get ready to go pick up my nephew at school, then had a Walmart run to make and was home after 3pm.  I was starving and made the quickest , saddest looking lunch, a boca veggie burger.  I was so hungry I didn’t take the extra 30 seconds to slice up tomato or add spinach.  Nope, my hungry self couldn’t wait. 

Here’s the epic fail……..My newest pride and joy in the food world are my green smoothies.  Today I made the ugliest most disgusting smoothie and I’m not sure what happened.  It was bad.  😦

It started out looking pretty good.  I added the regular 1 1/2 cup of spinach, strawberries, blueberries, green tea tbsp of p.b. and agave nectar.  I know the blueberries make it more of a brown color (if I add too many), but this was an ugly brown. And it tasted as bad as it looked.  So Ryan and I tried adding some frozen mango chunks but the damage was already done.  Oh well, I’ll share the pics with you and you be the judge.  I guess the peanut butter and green tea don’t mix well.

It’s finally ‘FALL’ here- weekend wrap pt2

Just 2 days ago I was sweating like a pig in my own house.  It was hot inside because the a/c wasn’t working.  It was hot outside because, well because it’s South Florida in October.  But, today is another story, another day.

IT’S IN THE 50’S TODAY!!!!!!!!!!!!!!!!!

It’s heavenly.  So this is what an October fall day is like.  Church was wonderful.  I LOVE my church  and church family.  God is doing so many wonderful things there.

After church, my sisinlaw and I went next door to the nursery as they are celebrating fall with a festival every weekend this month.   There were lots of families enjoying the horse drawn hayrides, decorations, pumpkin carving contests, pumpkin and banana bread samples, and more.  Here’s some pics:

The Farmer’s Market there had yummy samples and I wish they had samples of these huge cookies.  They looked so good, but I resisted the temptation to devour one or two of them.

We were starving and headed down the street to the perfect lunch spot for a day like this.  The Vienna Coffee House & Bistro in Cooper City is a small, warm, cozy, friendly  place with yummy soups and sandwiches.  The service is great!

I’ve barely slept the last 2 nights (in this sauna) and this morning I missed my women’s bible study.  DARN IT!  But I was sooooo tired and sore from using the hedger yesterday.  My arms hurt so bad!  I wasn’t going to go outside yesterday because it was so hot but I gave in.   Today I woke up to a 90 degree house.  What I wanted to do was get in my car, crank up the a/c and just drive around.  But I came to my senses and just waited for my friend John to come over and fix the a/c.

I can’t remember the last time I ate pasta.  I indulged in carb overload today.  Had cold pasta for lunch and then for dinner.  I added some broccoli, carrots, tomatoes and garlic.  Whipped up a quickie dressing that included: olive oil, vinegar, mayo, mustard.

Quickie weekend

Wow, quicky weekend.  It seemed to really fly by and I didn’t even do much.  Heck I did nothing.

Saturday:  watched chick flicks…All day!  I do mean all day!

Sunday:  Church (heavy duty, much needed sermon on forgiveness), lunch with family, back home, long walk in the evening.

That’s it, that was my weekend. 

I do remember I said I was going to get up early, get out the door and run.  What I hadn’t realized is that it was Friday and I had no intention of getting up early on Saturday morning.  So I didn’t.  What I did do was make pizza for lunch and pizza for dinner.

Sunday, my mom made a fish soup with shrimp, fish, plantains, and other veggies.  I had a small bowl since I wasnt in the mood for soup.  It was my brother’s birthday and that’s what he requested.  I did have a fish croquette and some avocado.  Sorry, no pics, forgot my camera.

I keep hearing about tempeh and have been wanting to try it.  Tempeh is a cultured cake of beans and grains and this one was  made with organic soybeans.  So dinner was a sandwich prepared with tempeh marinaded in lemon n pepper, spinach, avocado and tomato on whole grain thin bread (spread with guac).  And I washed it down with a super yummy green smoothie.

I went for a loooonnng walk tonight and there was a slight breeze, not quite fall here yet.  

Now I’m going to bed early like I promised.

Running at night….not for me!

Yesterday’s women’s Bible study:  Is my agenda in sync with his?  I pray that I can seek his perspective and agenda for my life.  I love this group. Real women dealing with real issues.

I had to go to the doctor’s office yesterday after I left church to get a referral for another mammogram.  The doctor wants to check on some ‘density’ that is showing up on the left booby.

Have you had a mammogram lately?  There’s pink everywhere and it’s Breast Cancer Awareness month.  Did you know that Breast Cancer is the 2nd leading cause of cancer death in women in America?  Lung cancer is 1st.  According to the University of Pennsylvania’s oncolink resource, 1 in 8 women will risk getting  Breast cancer in their lifetime.  So a mammogram is a great step in finding and treating it early.

I’ve been eating healthier foods in the past couple of months so that I can boost my immune system and loose weight.  I know that being overweight increases my risk of getting cancer.  Here’s a list of some cancer fighting foods.  These foods will not prevent you from getting cancer but by boosting your immune system you can fight it better. The American Cancer institute encourages us to eat more fruits and veggies, because we simply don’t consume enough.

Vegetables:  broccoli, cabbage, cauliflower, carrots, seaweed, swiss chard

Fruits:  berries, grapefruit, pineapples, tomatoes

Also, add garlic, green tea, nuts and whole grains to your diet.

Remember, the choices we make, the foods we eat, and our physical activity levels — will all have a direct impact on our overall cancer risk.

Between one thing and another I didn’t get my workout in during the day and decided to go for week3day2 of the couchto5k program with an evening run. NOT!FOR!ME!  I can take a nice walk in the evening but my body just doesn’t want to run.  Yes it was cooler out (not much) but I’m spent by evening.  I’m going to have to create and stick with a schedule.  I’m not a morning person.  Let me explain, I can get up early and usually do (6:30a-7a) but my body’s not quite ready for a workout that early.  That’s probably due to the fact that I go to bed so late.  It’s been so hot here in South Florida  that there is no way I can go and attempt a run in this heat any later.  So I’m left with a dilemma  challenge.  Oh what to do? 

I”m going to commit to getting to bed earlier (at least 11p).  When I get up tomorrow, I’m going to eat something light and energizing lace up my shoes and go for my run/walk.  I can do this! YES I can!

Well, here’s my eats for yesterday. 

  • Breakfast- egg whites, spinach, turkey omelet and Arnold thin bread, topped with fatfree cheese
  • Lunch  – spinach salad, cucumbers, tomato, edamame, avocado, balsamic dressing, chicken
  • Dinner – Boca veggie burger, with spinach, tomato and guac spread
  • snack- yogurt and pumpkin butter ..mmmmmmm

Did I say that?  I’m sore but it feels good?  I’m definitely sore and it hurts.  But yes in a satisfaction kind of way it feels good knowing I worked out hard and that’s the reason for the good pain.

I’m really enjoying starting my days with my Bible, cup of coffee and lots of silence, no noise, unplugged.

Breakfast needed to be major fuel because today I  started week 3 of the C25K program  and I put in an hour of yardwork.  (that’s why I’m so sore).  I mixed up some plain greek yogurt and some vanilla Chobani, added a banana, raisins, blueberries, Kashi honey sunshine, agave and cinnamon.

Today I did the week 3, day one of the c25k workout and felt great!  It wasn’t until my yardwork workout that I started to feel some pain.  The bending, squatting, pulling just seems to kick my butt!!! Literally my butt!  It hurts!  But not in a “I pulled something” kind of way, it hurts in a “wow, I worked my butt off” kind of way.  I keep telling myself it’s good pain.  What’s that saying, no pain-no gain.  I guess I’m gaining!

I was exhausted because it’s really hot here in South Florida and finally went inside for a much needed smoothie.

GREEN SMOOTHIE:

  • 1 1/2 cup of spinach

I drank two of these babies (yes another liquid lunch) and 1/2 an apple with some peanut butter.

Dinner was a quick chicken n veggie wrap.  Grilled chicken breasts, onions, carrots, edamame.  Spread some hummus on the whole wheat  wrap, added tomato, avocado.  Melted some mozzarella cheese on the chicken and threw it all together.  Quick, easy and super tasty and healthy.
