A 5K in my near future

I’m so excited!  I found a 5K I can do Oct 31st!!  This gives me more incentive to get up and move more!!  I’ve been doing the C25K program but haven’t been consistent.  So today I started week 2 AGAIN! It feels soooo good.  I know that you ‘runners’ are giggling at that but I’m just beginning and everyone has to start somewhere, right? 

My goal for the 1st 5k I did in February was to just finish.  And I did.  This time my goal is to be able to run at least 1/2 the distance and walk when I have to.  I’ve been eating really good stuff and I have so much more energy. This morning began with an egg white, 2 slices turkey bacon and spinach dip spread on 1 slice of whole grain bread.

I had a wasa cracker with spinach dip after my run/walk and for lunch I was satisfied with a mango/spinach smoothie.  One of Hunter’s friends was here and he reluctantly tried the smoothie and loved it.  They’re becoming a hit around here.   I think dinner tonight will be leftovers ( baked chicken,broccoli).

Mama comes for a visit

Got a visit from my mama today.  And she brought goodies. 

Lots of avocados means lots of guac.  I made a few batches and gave some away.

Treat # 3 is her fish croquettes….OMG these ROCK!  It’s actually a long process to make these that I’m not quite ready for but the end result is delish.  They’re spicy and would go great with a nice cold beer.  I heated some olive oil (super hot), fried them for a couple of minutes and they’re done!  YES I said fried, but I really didn’t use that much oil.

I served up 2 croquettes with some avocado for lunch. So good.

Later in the afternoon I enjoyed a cup of mango/spinach/smoothie and then in the early evening I went for a 30 minute walk around the neighborhood.  It was so muggy out tonight. 

I’m going to catch up on Biggest Looser.   I didn’t like it when Jillian grabbed Shay’s shirt last week and dragged her like she’s a dog on a leash.  I know they need tough love but that was a bit much.  I like Bob.

There was no school today and I was lucky enough (I mean that) to have my nephews over for the day.  The day started out beautifully.  Andrew slept until 11:30am and Ryan was building a bridge for his cars, which kept him busy for a couple of hours. 

When Andy woke up his sweet brother Ryan wanted to make him pancakes.  He did pretty good because Andy devoured them.

Ryan’s been a devoted follower of my blog and has seen my smoothies.   Andrew decided he wanted to try a “super woosie version” of a mango green monster.

For dinner we made turkey burgers and some baked plantains….all were eaten before I could take a pic.  These were my best turkey burgers!  It was a great start to what will be an awesome week!

After I left church, I went next door to visit the nursery and was pleasantly surprised.  I hadn’t been there in a while and they now have a Farmer’s Market.  This is one of the prettiest nurseries I’ve ever seen.

I had 1 small slice of pizza, birthday cake and ice cream.   So I indulged a bit this weekend, no biggie.  I look forward to eating lots of veggies and fruits this week.
 
 
I’m bummed to say this, but I think I’ve caught another cold.  I don’t know what’s up with my system, but I hope this doesn’t get any worse.  Thank God I was able to enjoy my weekend, it was beautiful!

Volunteered.  Angel Food Ministries. Love this ministry. Cut your food bill in half. 

Angel Food Ministries is a non-profit, non-denominational organization dedicated to providing food relief and financial support to communities.  Each month’s menu is different than the previous month and consists of both fresh and frozen items with an average retail value of approximately $60 that you purchase for only $30.  We were so busy, I forgot to take pictures but here’s a sampling of the Thanksgiving Holiday box ($36 frozen/fresh items)

How blessed am I?  I’ll tell you, I have the best friends.  Last night two of them took me out to dinner for a belated birthday celebration.  We went to Grand Lux Cafe.  I love that place.

I love their varied menu but I was craving a pizza and a glass of wine.   So it was the Thai Chicken pizza for me.  Had a spicy peanut sauce, bean sprouts, carrots, green onions, cilantro, chicken and mozzarella.  Yummy!

It was a great night with good friends, good conversation and laughs.

Fast forward please

I know I keep repeating it but, where are the days going?  Is it me or are the days, weeks and months just going into major warp time?  At the beginning of this year I prayed to God that this year would go by really, really fast. I just wanted to fast-forward into 2010.  I do believe he answered that prayer because we’re almost there.  T.Y.J.!

As I reflect I am reminded that I am where I am because of choices I’ve made.  That can apply to many different topics but I’m specifically talking about my weight.  One of the great things about journaling is that you can look back and see where you were mentally, and spiritually at the time.  While reading some entries and going back to my calendar, I can see where I have truly made a great effort this year to get healthier, exercise more and loose weight. 

Because I log my exercise and food intake, I feel good knowing that the effort is there.   But simple effort is not enough. I have made a commitment to consistently make daily time for devotions, bible reading and time with God.  I have to make that same commitment with my eating and exercise routines.  I want to strengthen my body, mind and most importantly, my relationship with God.  These things require daily action.  As I’m challenged in different arenas, I must stay focused, and he will guide me.   Isaiah 58: 11-12.

Today was part deaux of yardwork duty, and I’m sore.  I can barely type.  My arms, legs, thighs, butt are all screaming loudly.  But I’m getting a lot done and there is satisfaction in that.  Soooooo, I did what sore people should do……luxuriated in a bubble bath   :)…..aaaahhhhh…..calgon…actually it was Aveeno .

I can’t remember the last time I filled the tub (for myself,  not my nephew).

My church is doing a fall series called ” Unplugged” …unplug from the noise and plug into God .  We’re reading from  the book of John and doing daily devotions.  Well, today I unplugged in a bubble bath and had a nice quiet long prayer time with my Lord.   Thank you Father for your love and Mercy!
I should probably do another post for the food, but, I’m too tired.  It’s all going here. Last night’s dinner was a frozen meal (Kashi) and it was kind of bland.  Followed by a Kashi   cookie.  I was too pooped to cook.

My energy for all this yardwork today came from yogurt and fruit in the morning followed by a power smoothie!!!  Loving those green monster smoothies.  

Dinner tonight was a healthy, lo-cal fish, cauliflower mash and avocado.

Cauliflower Garlic Mash

  • steam 1/2 head of cauliflower florets
  • puree florets in blender with garlic clove
  • pour back in pan, add 1tsp butter 
  • stir (for thicker mash, add potato flakes)
  • Tastes just like mashed potatoes  🙂

Who needs a gym workout??Come to my yard

Who the heck needs a gym workout when you have an overgrown and unattended yard??!  It rained a lot this weekend and that just fuels up the weeds, plants and trees in my yard.  I decided that I would spend an hour out in the yard and I ended up with quite the workout:

Arms….pulling weeds, branches, swinging the machete since I broke the garden big scissor thingy.  I hope I can pick up a pencil tomorrow, cuz they hurt.

God is merciful tho….he gave me a much needed rainfall (minus lightning) to refresh me.  He knew I wouldn’t have lasted 20 minutes without that shower.  Felt so good to just be in the rain.

I came inside and QUICKLY made a snack before I passed out!  A Wasa cracker, hummus, tomato…..and..

Mango, 1 1/2 cups spinach, 1/4 cup OJ, 1/4 cup milk, agave nectar.

I started my morning with Peanut butter and pumpkin butter on whole grain thins.  I love pumpkin and this butter is soooooo   good.  Plus a nice cup of coffee.

My first attempt to make a veggie burger turned into mush.

But it did taste good.  So try to get past what it looks like and focus on the ingredients.  

In the processor went:  1/2 can black beans, onion, carrots, salt, pepper, garlic salt and breadcrumbs.

Blend it all nice and smooth and somehow try to make a patty.  It kept sticking to my hands and wouldn’t let go.  Grill on a pan with olive oil for about 3-5 minutes, flip (that’s where it got messy).

I put the ‘burger’ on a multi grain thin roll (which saves 100 calories from 2slices of wheat bread), added spinach leaves, tomato, oh and smeared hummus on the thins.  I now add cilantro to my homemade hummus.

BIG BIG SHOUT OUT to my friend Nathalie, who just finished her first TRIATHLON!!!  That really inspires me Natha.  I’m looking forward to when I can RUN my first 5k.  I did one last February but walked most of it, I was really out of shape.  But I’ve been working on the cardio  and c25k program.  Still working on week 2.  I haven’t been obsessed with the scale, although I have dropped a couple more pounds.  I can feel the inches I’ve lost in the clothes I’m wearing.  But more importantly, I have way more energy, am sleeping better and feel really good. 

Church was great yesterday as always…….remember that our God is bigger than our problems.
