What an absolutely beautiful morning! I got up as usual 6:30am, ate some peanut butter on bread, laced up my shoes and headed out the door. It felt so good to walk my 3 miles in the early a.m. On my last 1/2 mile I met up with a 95 year old sweet lady (YES 95!!) who was taking a stroll with her walker and friend. God bless her, I hope I can walk if I make it to 95!! So inspiring!
Well, my mom came for a visit yesterday and guess what we did…..yep her favorite….yardwork!

I made us an egg-white omelet with chopped onions, spinach and tomatoes. And my mommy loved my green smoothie!

Last night I made a yummy turkey taco but on Arnold whole grain bread instead of taco shells. Soooo good. This quickie meal was whipped up in 20 minutes. Add adobo, chopped onions, paprika, sea salt and pepper to some Jenni-O ground turkey. Cook until done.

Toast the bread and top with turkey, tomato, avocado and salsa!

Well I had another mammogram and man did that sucka hurt!!!!!! The doctor wanted to see more of my left booby and so a spot compression was done. And did she compress on that spot. Seriously, it hurt! Hopefully all is well and I won’t have to have that done again until next year.
I have a long to-do list for today and so far, well I managed to make a great lunch and there will be leftovers for dinner tonight. I love wraps and usually stuff them with lots of yummy, healthy foods. Ok, so chicken was marinading since morning in my favorites, Mojo, honey mustard, and spicy sauce. If you marinade your chicken or steaks in these I guarantee you will be happy with the outcome.

Next, I added pepper, adobo, oregano flakes and paprika. I love to use paprika to add color to the chicken.

While the chicken was cooking in it’s yummy juices I added some onions, carrot strips and spinach.
I wanted some fries with my wrap but they are off limits, so I cut up some sweet potato and sprinkled them with salt and pepper.
Chicken’s still cooking and an amazing aroma is filling my house. The sweet potato fries go in the oven to bake at 425 for about 15-20 minutes.
Next, I cut up some avocado and before I know it….chicken’s done! Start layering the whole wheat wrap with carrots, spinach, onions

Sometimes I just wonder where my day goes. I really wanted to do my walk/run this morning but somehow never did. I got distracted doing other things and before I knew it, it was time to go pick up my nephew at school. So I regret not going for my walk/run earlier because now the lil’ guy won’t be picked up until after 8:30p tonight. By that time, I need major motivation to go out and exercise. Here’s today’s eats so far.
Breakfast: Fage yogurt, a peach and 1/2 an apple with cinnamon


LUNCH: Tilapia and salad
Tilapia, yogurt and panko crumbs cooked in 1 tbsp of olive oil for a couple of minutes on each side. The fish was seasoned with sea salt, pepper and paprika.

I started the salad with baby spinach, tomato and avocado

Then the baby carrots and edamame were boiled for a lil’ bit, rinsed in cold water, and added to the salad.

I sprinkled the fish with a lil’ lemon juice, the salad with pepper and added some balsamic vinegar.
To die for!

And finally, added some lots of feta cheese.

And there you have today’s masterpiece to make up for yesterday’s epic fail.

Wow, quicky weekend. It seemed to really fly by and I didn’t even do much. Heck I did nothing.
Saturday: watched chick flicks…All day! I do mean all day!
Sunday: Church (heavy duty, much needed sermon on forgiveness), lunch with family, back home, long walk in the evening.
That’s it, that was my weekend.
I do remember I said I was going to get up early, get out the door and run. What I hadn’t realized is that it was Friday and I had no intention of getting up early on Saturday morning. So I didn’t. What I did do was make pizza for lunch and pizza for dinner.

Sunday, my mom made a fish soup with shrimp, fish, plantains, and other veggies. I had a small bowl since I wasnt in the mood for soup. It was my brother’s birthday and that’s what he requested. I did have a fish croquette and some avocado. Sorry, no pics, forgot my camera.
I keep hearing about tempeh and have been wanting to try it. Tempeh is a cultured cake of beans and grains and this one was made with organic soybeans. So dinner was a sandwich prepared with tempeh marinaded in lemon n pepper, spinach, avocado and tomato on whole grain thin bread (spread with guac). And I washed it down with a super yummy green smoothie.

I went for a loooonnng walk tonight and there was a slight breeze, not quite fall here yet.
Now I’m going to bed early like I promised.

Yesterday’s women’s Bible study: Is my agenda in sync with his? I pray that I can seek his perspective and agenda for my life. I love this group. Real women dealing with real issues.
I had to go to the doctor’s office yesterday after I left church to get a referral for another mammogram. The doctor wants to check on some ‘density’ that is showing up on the left booby.
Have you had a mammogram lately? There’s pink everywhere and it’s Breast Cancer Awareness month. Did you know that Breast Cancer is the 2nd leading cause of cancer death in women in America? Lung cancer is 1st. According to the University of Pennsylvania’s oncolink resource, 1 in 8 women will risk getting Breast cancer in their lifetime. So a mammogram is a great step in finding and treating it early.
I’ve been eating healthier foods in the past couple of months so that I can boost my immune system and loose weight. I know that being overweight increases my risk of getting cancer. Here’s a list of some cancer fighting foods. These foods will not prevent you from getting cancer but by boosting your immune system you can fight it better. The American Cancer institute encourages us to eat more fruits and veggies, because we simply don’t consume enough.
Vegetables: broccoli, cabbage, cauliflower, carrots, seaweed, swiss chard
Fruits: berries, grapefruit, pineapples, tomatoes
Also, add garlic, green tea, nuts and whole grains to your diet.
Remember, the choices we make, the foods we eat, and our physical activity levels — will all have a direct impact on our overall cancer risk.

Between one thing and another I didn’t get my workout in during the day and decided to go for week3day2 of the couchto5k program with an evening run. NOT!FOR!ME! I can take a nice walk in the evening but my body just doesn’t want to run. Yes it was cooler out (not much) but I’m spent by evening. I’m going to have to create and stick with a schedule. I’m not a morning person. Let me explain, I can get up early and usually do (6:30a-7a) but my body’s not quite ready for a workout that early. That’s probably due to the fact that I go to bed so late. It’s been so hot here in South Florida that there is no way I can go and attempt a run in this heat any later. So I’m left with a dilemma challenge. Oh what to do?
I”m going to commit to getting to bed earlier (at least 11p). When I get up tomorrow, I’m going to eat something light and energizing lace up my shoes and go for my run/walk. I can do this! YES I can!
Well, here’s my eats for yesterday.
- Breakfast- egg whites, spinach, turkey omelet and Arnold thin bread, topped with fatfree cheese
- Lunch – spinach salad, cucumbers, tomato, edamame, avocado, balsamic dressing, chicken
- Dinner – Boca veggie burger, with spinach, tomato and guac spread
- snack- yogurt and pumpkin butter ..mmmmmmm

Sundays are great aren’t they? I consider Sunday the beginning of my week and therefore Mondays don’t hurt as much. Granted, I don’t have to get up and drive in crazy traffic and work for 8 hours. But, this mentality will serve me well when I do start a new job. I love going to church, listening to a great sermon, enjoying fellowship with other members and then just whatever. That’s what Sundays are for. Whatever. Whatever makes you feel good. Take a nap, watch some football, lunch with family, visit family, go to the park or a festival or do absolutely nothing.
Yesterday’s message on “God’s Provision” made me reflect on this past year. He has provided for all of my needs, not necessarily my wants. Yet I couldn’t be happier.
I was running late and had a banana on the way to church and then 2 cups of coffee. I knew this was going to be a restful day, so I went to Publix for some yogurt and headed home to make lunch.
I marinaded tofu in ‘mojo’ and spicy teriyaki sauce and sauteed it with onions and edamame. It smelled soooo good.

Served it up with some brown rice and avocado. YUM!

For some reason, I haven’t been drinking as much water as I normally do and today I think I downed 2 gallons. I did some reading, but pretty much just chilled. For dinner I cooked shrimp in tomato, basil, and garlic sauce.

I haven’t had rice twice in one day in a long time. But it was brown rice and a 1/4 cup, so no damage done.
All in all, it was a perfect, quiet, blessed Sunday. What do you like to do on Sundays?

Starting this month I will be divulging more detailed information about my weight loss journey. I’ve been enjoying this new healthy eating so much that I have neglected to give details about my specific weight loss goals. I truly am enjoying putting together fruits and veggies and creating some yummy snacks and meals that are lo-calorie. Even though it’s time consuming, I will be putting together a ‘recipe’ page with my quick and easy creations. Your suggestions are welcomed.
Friday I slept in and I hate when I do that because I tend to feel sleepier when I get too much sleep. Normally I get up at 6:30 with my son, sometimes make him a quickie breakfast and then start my morning. Yesterday I went back to sleep at 7a and woke up at 10a…yikes! I had a small cup of yogurt, banana and cinnamon. Then I did my C25K walk/run for 30 minutes. I spent some time on my job search (need a job badly), made some phone calls and before I knew it I was hungry again.
Lunch was a green smoothie that turned brown because of the blueberries and a yummy salad drizzled with balsamic dressing.

I love this lunch because it’s light but filling. The edamame has lots of protein.
Later in the afternoon I “craved” coffee. Since caffeine keeps me up, I don’t usually drink coffee any later than 5p unless it’s decaf. I brewed a cup and sat and ‘designed’ my front and backyard landscaping. I’ve been working on my yard and have a visual of what I want it to look like. So I sat with my favorite magazine and cup of coffee.

Oh boy the caffeine kicked in and I felt an urge to move furniture. So I FINALLY moved the dead treadmill into the garage and moved a sofa into its place.

I mopped the floor in my family room (aren’t they shiny) and did some laundry. I’ve been using vinegar to clean my floors and I love how shiny it leaves them. Whenever I sit and look at a design magazine I get ideas and so I started to rearrange a few things in the kitchen. Brought in some fresh flowers from the yard and voila, ready for fall.
I worked up an appetite after all that work and dinner was a yummy veggie wrap. I sauteed broccoli, asparagus, carrots and onions in a tbsp of olive oil and spicy teriyaki sauce. Then I spread my homemade hummus on a whole wheat wrap and filled it with the veggies. I only ate half of the wrap. Chelsea ate the other half. That girl (my son’s gf) can eat! She’s tiny but eats like a man, a big man!

Later I snacked on walnuts while catching up on Grey’s Anatomy.

That coffee kept me up pretty late. I think I finally went to bed around 2am. See, I told ya the caffeine kicks my butt.

Treat # 3 is her fish croquettes….OMG these ROCK! It’s actually a long process to make these that I’m not quite ready for but the end result is delish. They’re spicy and would go great with a nice cold beer. I heated some olive oil (super hot), fried them for a couple of minutes and they’re done! YES I said fried, but I really didn’t use that much oil.

I served up 2 croquettes with some avocado for lunch. So good.
Later in the afternoon I enjoyed a cup of mango/spinach/smoothie and then in the early evening I went for a 30 minute walk around the neighborhood. It was so muggy out tonight.
I’m going to catch up on Biggest Looser. I didn’t like it when Jillian grabbed Shay’s shirt last week and dragged her like she’s a dog on a leash. I know they need tough love but that was a bit much. I like Bob.
